I thought I'd take a turn sharing what I managed to do with one chicken.
Whole chickens were on sale for 99 cents/pound. The one I purchased weighed just under 5 lbs and for the sake of this post I'll say it cost me $5.00.
The first night I roasted the whole thing. We had roasted chicken with potatoes, gravy and a vegetable.
The next night I used the leftover chicken I'd cut off one side and made chicken tacos. The next day for lunch we had taco salads with the left over chicken taco meat.
Last night I cut off more meat and made a chicken pot pie with bottom and top crust. Dan's favorite.

All I can say is 'WOW' Well done you :)
ReplyDelete...we buy a whole rotisserie chicken at Costco for $5.99 ans we each have 4 meals.

ReplyDeleteWe too are fans of chicken as a way to stretch our dollars and have tasty meals in the bargain. We are drifting more and more towards vegetarianism, but I doubt we will ever get there totally, and chicken is still on the menu.

ReplyDeleteGood job on all the uses of a chicken. I have some thighs that I cooked the other day, and some has gone into soup half of which is frozen. Left overs at my place are fun.

ReplyDeleteBravo!!! That is great, I buy a whole chicken now and then and do what you did or break it down and grill it etc. But I always make broth. I rarely buy rotisserie chicken either.

Well done! I learnedvro cook that way from my mother, who did the same things you did, although never made us a pot pie! Yours looks divine.
ReplyDeleteYou certainly made good use of that chicken. Stretching into several meals is always very rewarding, and not just in the purse.
