What to Do With Bok Choy?

I planted way too much bok choy this year.  I started some inside and sowed seeds in the garden too.  What was I thinking?  I use bok choy in stir fry with chicken, pork or beef and that's the extent of my repertoire for bok choy.

Any recipe suggestions?  I know I can pick some and keep in my refrigerator for a week or more but I may have to just give it away or compost the rest.  It will bolt soon.

Spinach is doing really well as are my lettuces.

It was a delicious meal.  But what else can I use it for?

there are lots of soup that you can put your Bok Choy in. Just put Bok Choy recipes into google and you will fin plenty.

I use choy for soups too. I make a Green Choi soup that features it, but it's good in other soups as well.

Yum! I love it and use it daily in stirfry. I also blanch some for 30 seconds and freeze for winter.

I use the raw stalks as spoons to eat hummus.

I admit that I've never eaten bok choy! I've always wondered what it tastes like and it looks so pretty that I want to grow it in my garden.

I love bok choy in Thai curries. I have tried to freeze it (both blanched and unblanches as is sometimes suggested) but I find that the stems get mushy, although the leaves themselves are fine. This year I'm hoping to try a suggestion made by Mac to dehydrate the stems as this may give me a better texture. Now I just have to get that dehydrator I've always wanted!

Bok choy can be used in a lot of ways. You can use it in an Asian salad. But go out of the Asian area and use it in other dishes as well. It goes well with shrimp scampi. I usually cut it in half and wash it well. Then sautee the open side until it browns, then add it to the scampi sauce to finish cooking. It goes well with lemon and garlic. I've also used it in side dishes with dishes with gravies. Just cook in the gravy. It is great grilled. Again cut in half and wash well. Brush with oil or marinate in a dressing before putting on the grill.
